Paco Roncero, renowned chef from Madrid with two Michelin stars and three suns in the Repsol Guide, has opened ESTADO PURO and SUBLIMOTION in Ibiza, one of the culinary offerings of the new Hard Rock Hotel Ibiza. It is the first Hard Rock Hotel in Europe of 5 stars with the highest occupancy of the island.
The design study, estudiHac, has designed ESTADO PURO gastrobar, a local with a capacity of 300 people and two types of environments: one of them to enjoy spanish tapas and another one more casual. estudiHac has created these environments playing with pure materials. Natural travertine, exquisite creation of textures based on the octagon, the carefully furniture selected and special works tailor-made oak and teak. All this brings a fresh and elegant look to this new ESTADO PURO.
Touches of the legendary brand Hard Rock are not missing inside the local. estudiHac has created the known as Ham-rock corner, where it has designed a large neon ham that remember to the famous Hard Rock guitars, just next to the big podium for the go-go/master ham and a large sculpture of a red chicken, ‘the chicken-teacher’, which shows the ‘neo-cañís’ phrases. All of these popular phrases are throughout the restaurant. In the middle of the restaurant it has created a huge palm coated of spanish combs, main logo of ESTADO PURO.
For the outdoor terrace estudiHac has sought inspiration in the work that Paco Roncero has done in the field of olive oil and textures, creating a great space chaired by four large olive trees, the olive oil origin.
Inside SUBLIMOTION, the other new restaurant of Paco Roncero, there is a gastrosensorial show, where the culinary art and technological innovation come together to create a complete emotional experience, unprecedented so far.
estudiHac has collaborated with the design of the access areas to the famous Magic Box, creating different environments which transport to 12 guests every night to a misplaced freight warehouse, an old truck and a space dedicated to water to finally get to the main room for dinner. After enjoying this great experience culinary, the guests go to the lounge terrace, designed by estudiHac “following the essence that characterizes this amazing restaurant”, explains the creative director of estudiHac, José Manuel Ferrero.
To estudiHac has been a pleasure to work with Hard Rock Hotel Ibiza and Paco Roncero, a leader in cutting-edge cuisine, in a project so personal and international. The design study from Valencia wanted to make a ‘bespoke’ design, according to the philosophy that uses for all its projects.
Creator of a culinary investigation workshop unique in the world, executive chef and director of the Casino de Madrid and Estado Puro gastrobars and creator of “Kitchen Manager” software, Paco Roncero is considered one of the leading representatives of Spanish and Madrid vanguard cuisine.
He trained at the School of Hospitality and Tourism Madrid and completed stages at Zalacaín Restaurant and the Ritz Hotel in Madrid until 1991 when he joined the staff of the Casino de Madrid. During this time, the explosion of his creative personality was a real revolution for the Casino de Madrid and the national culinary scene. In addition, he’s obtained the most prestigious culinary awards including the 2005 Chef L’ Avenir Award by the International Academy of Gastronomy, and the 2006 National Gastronomy Award by the Spanish Royal Academy of Gastronomy.
